Flying Tater Farm was established in 2015, farming in and around the infamous sweet potato capital of the world, Vardaman, MS. The soil in this area, along with the varieties of sweet potato, produces the sweetest tasting sweet potato in the U.S.A.
Colten Anthony and brother-in-law, Justin Wade, partnered up and started farming 250 acres of sweet potatoes. Since then, they have increased their acreage and are now farming 2,000 acres of sweet potatoes, corn, and soybeans. Flying Tater Farm is a certified clean seed grower, which means the seed and plants are inspected routinely by the state of Mississippi. This assures the seed and plants remain disease and pest free.
The sweet potato plants originate from a research center at Mississippi State University. These plants are then cut and transplanted by hand into the certified greenhouse at Flying Tater Farm. The plants are monitored daily by Colten Anthony and staff. Once the plants have reached optimal size, they are then hand cut and planted into the field. The potatoes are harvested in the fall then stored and cured for seed the following year.
Flying Tater Farm grows three varieties of sweet potatoes. They are Beauregard, Orleans, and the rare, Evangeline. The Evangeline potato was released by Louisiana State University Ag Center having twice the sugar profile as other sweet potatoes, making it the sweetest potato. These potatoes are not widely found in large box stores due to their shorter shelf life. Flying Tater Farm wants to make these rare potatoes accessible to the country along with the other two varieties.
