What is difference between the three varieties of sweet potatoes?
The Evangeline is the sweetest sweet potato you can find. You rarely see this variety in the grocery stores because of the shorter shelf life.
The Beauregard is the most common potato sold in the U.S. It is still packed with sweetness and has stood the test of time in the commercial world.
The Orleans is a newer variety created that mirrors the Beauregard. It is a better yielding potato than the other two varieties. There is not much difference between the Orleans and the Beauregard from a tasting standpoint.
