Sweet Potato Taco
Ingredients:
2 medium Evangeline sweet potatoes
1 lbs hamburger meat
1 avocado (diced)
1 purple onion (diced)
Cherry tomatoes
shredded cheddar cheese
taco seasoning
taco sauce
First, wash the potatoes, wrap in foil and then bake them at 400 degrees for 1 hour or until soft.
While the potatoes are baking cook hamburger meat in taco seasoning and follow the directions on the package.
Next, dice tomatoes, avocado, and purple onion.
When the potatoes are finished cooking, unwrap, and cut the potatoes in half.
Add taco meat, followed by shredded cheese. Sprinkle onions, tomatoes, and avocado on top. Drizzle with taco sauce.
